Cooking time 4-5 hours . Serving 6-7
Ingredients for Nihari Masala:
Coriander Seeds 1 Tbsp
Fennel seeds 1-1/2 tbsp
Black pepper 1 Tbsp
Black Cumin 1 Tsp
Green Cardamom 5-6
Star anise 2
Cloves 1/2 Tsp
Cinnamon stick 2
Mace 1 piece
Nutmeg 1 small
Ingredients for Beef Nihari:
Oil 1 cup
Beef 1.5 kg
Ginger Garlic Paste 1 Tbsp
Salt 1 Tbsp
Red chilli 2 Tbsp
Kashmiri red chilli 1 Tbsp
Turmeric Powder ¼ Tsp
Cumin powder 1 tsp
Nihari Masala
Beaten yogurt 3 tbsp
Water 2 Ltr
Wheat Flour 3 tbsp + Water 1 cup
Method for Nihari Masala Preparation:
– Put fennel seeds, black pepper, coriander, cloves, nutmeg powder, star anise, green cardamom, cinnamon stick and mace in a grinder. Grind it well
– Set aside. Beef Nihari Preparation
– Take oil in a pan.
– Add mutton, ginger garlic paste, salt, red chilli, Kashmiri red chilli, Turmeric powder and the Nihari masala.
– Cook for 10 minutes on high flame.
– Add beaten yogurt.
– Add water and simmer for 5-6 hours on low flame or till the meat gets tender.
– Separate half of the oil.
– Make a mixture of flour (3 Tbsp) and water (1 Cup) and add it in the Nihari gravy. Cook for 5 minutes more on medium high flame.
– Take it in a serving bowl. Garnish with green chillies, fresh coriander and ginger and serve.
