Try this flavorful Chicken Kabsa Rice paired with ‘Whole Chicken with Skin’ by ‘Tawaqqo’ and enjoy delicious arabic cuisine at home.

Ingredients:
Oil ½ cup
Cinnamon stick 2
Star anise 3
Bay leaves 2
Nutmeg ½
Mace 1
Cumin seeds 1 tsp
Black pepper 1 tsp
Cloves 10
Green cardamom 4-5
Black cardamom 2
Chopped onion 2
Blended tomatoes 3
Ginger garlic paste 1 tbsp
Salt 1-1 ½
Crushed red chilli 1 tbsp
Coriander powder 1 tbsp
White pepper 1 tbsp
Skin chicken full
Water 4 glasses
Basmati rice 500 gms
Lemon zest 1 tsp
Green chillies 4
Clarified butter 2 tbsp
Cashew nuts
Walnuts
Raisins
Method:
– Take a pot and add oil, cinnamon stick, star anise, bay leaves, nutmeg, mace, cumin seeds, black pepper, green cardamom, black cardamom and cloves. Mix it.
– Add chopped onion. Mix it well.
– Add blended tomatoes, ginger garlic paste, salt, crushed red chilli, coriander powder and white pepper. Mix it well till the oil separates.
– Add skin chicken full(by Tawaqqo). Cook it for 5 minutes on high flame.
– Add water and simmer for 20 minutes on low flame.
– Set aside the chicken.
– Add Basmati rice soaked in water for 30 minutes in the pot and lemon zest. Simmer for 10-15 minutes on low flame.
– Add clarified butter in a pan and add cashew, walnut and rasins. Saute it.
– Set aside.
– Add the chicken in the same pan and fry it for 2 minutes on each side on high flame. – Assemble the dish and add the dry fruits on top. – Ready to serve.
